cheap vegan eats
It's very cheap, very filling, and VERY yummy.
I call it
- 1 can vegetable broth + 2 cans water
Bring to a boil and add the following:
- 1 small or 1/2 large cabbage, chopped
- 3 carrots, sliced
- 3 small or 2 medium potatoes, diced
- 1 small onion, chopped
Basil, sage, garlic salt, salt & pepper
Boil/simmer for 30-40 minutes. Add the following:
- 1/4 C soymilk
- 1 heaping tsp vegan sour cream
Serves 4-6 (Appealing name, isn't it?)
It's sooo good. I'm trying to get in all the warming winter food I can. It's already in the 70s down here in Alabama. Of course, the temperatures will be dropping again tomorrow, but they'll be back up soon enough.
