Has anyone tried this? Is it meshugeneh to think there might be a good, vegan matzo ball mix?

It's not good :( tofu in motzoh balls just doesn't work that well.

I believe Manischewitz's matzo ball mix is vegan - it's just matzo meal and seasoning. (Full ingredients: matzo meal, salt, monocalcium phosphate, sodium bicarbonate, onion, pepper, garlic, celery seed.) The instructions say to just add egg and let it sit in the fridge, so you could probably use an egg replacer for that. I make the broth with vegan chicken bouillon cubes from Whole Foods, then throw in celery, carrots, and egg noodles.

Yeah, I'm pretty sure that when I go to my friend's house for Passover she makes mine with Manischewitz's mix plus egg replacer.

Ditto. They're not exactly light and fluffy, though, but I suspect someone food sciency person will remedy that sometime soon (not me). Regardless, when I make them the plus is that I can eat them all, as opposed to the rationed non-veg ones for the rest of the fam. I haven't been able to make any that appease my family, but I don't claim to be a baker. Or dough boiler.
