Does anyone know of a vegan kugel recipe? Or a vegan latke recipe? Can I just sub potato starch for the eggs?

i dont have a recipe for it, but i would think that flax seed would work better than potato starch to sub in for the eggs...

Those recipes use potato or cornstarch. I was just wondering if anyone had used potato or cornstarch instead of eggs in latkes.

It has been a while since I last made latkes, but I think that I used cornstarch. If I make 'em again I'll probably try potato starch, that's a good idea!

I've made latkes without the eggs. I've used egg substitute, though that makes no sense whatsoever since that's not a binder, but they generally turn out well.

this shit is DELICIOUS, though a little expensive to make because it requires a whole tub of sour cream and a whole tub of cream cheese (vegan, obv). i ate it before i was vegan and i couldn't believe the creamy goodness. seriously, this is like in my top 10 foods of all time ever.
