So my roommates have an overload of tomatoes growing in their backyard and polluting the kitchen. Any fun delicious recipes using a LOT of tomatoes that anyone has on hand?

besides the obvious tomato soup?... you could make some sort of dough and from the tomatoes in there with some spices. or you could buy cheap vegan puff pastry .

We had a huge crop of tomatoes this year and had a salsa party, a "making red sauce" party and made a ginormous pot of southwestern chunky soup (pureed tomatoes, corn, cubed sweet potato, zukes, onions and black beans with "taco seasoning").

Well, you just throw all the soup ingredients into the pot for the soup. :) Or, if you have a crockpot, that works as well.

For the salsa, it all depends on your preference with the texture. If you like chunky salsa/salsa fresca, then you just chop everything to that consistency and toss it in a bowl with a dash of lemon or lime juice. If you want a more soup-y consistency, you can make it like you would salsa fresca, then put on some food safe gloves and mash it up with your hands.

Making red sauce ... you'll have to experiment with some recipes before you find the one that works for your tastes. I make a simple, heavy-on-the-basil sauce that preserves well.

I make a lot of gazpacho when I have a lot of tomatoes (and I freeze a lot of it too!)

Whir in a blender or food processor:
2lbs tomatoes
1 large or 2 small green peppers
1 cucumber
2 cloves of garlic (crushed)
A slice of bread soaked in 2 tbsn vinegar (ACV works just fine!)
Some salt or a splash of soy sauce/braggs
Olive oil

Amazing! I'm definitely going to make this soon. I haven't had gazpacho in a long time, I can't believe I didn't think of that.

I ususally go for tomato soup, tomatos stuffed with chilled chickpea "tuna" salad, or make spaghetti sauce to freeze.

I second the salsa party. Or a lovely spaghetti sauce, and then making giant lasanga's that you can freeze?
Yum. I wish I still had tomatoes. Specifically green tomatoes. Drool.

Salsa and tomato soup are always good. Also if you have any green tomatoes, fried green tomatoes are a good one. :D Have fun!

Garlic tomatoes! I don't really have a recipe, since it's one of those old family "add what seems enough" deals, but just chop up some tomatoes and add minced garlic, chopped onion, and a splash of vegetable oil. Marinate in the fridge until they're nice and garlicky. Excellent on top of mashed potatoes.

Tomato and Tarragon soup. Obviously, cook onion and leek with oil and not butter to veganise and ignore the cheese scones. :)

While this doesn't take a lot of tomatoes to make, "Thunder Cake" is a surprising way to use them if you end up with a few left over. There's recipes on Google can be converted into a vegan version.
