Vegan sandwiches take over campus

Yesterday I was hanging out with two friends (reading VegNews, actually) - a vegetarian and an omni. The vegetarian and I were discussing all the things we liked best about not eating meat, when the omni said out of nowhere, "You know, if I knew how to make good veg sandwiches, I'd give up meat." I asked if she was serious, and it turns out she was.

This is kind of cool, because she is a total animal-lover, almost all of our friends are vegetarian, and she's always been honest that the comfort, inexpensiveness, and convenience of sandwiches are the only reason she still eats meat. Obviously, I'd prefer to give her recipes that also don't use dairy or eggs. (The only quick-and-thrifty sandwich I ever pack for lunch is a PB&J, which makes me happy, but is less than inspiring.)

So, I turn to you awesome people to help me out. What's your favorite vegan sandwich? How do you make it?

i make a lot of wraps

chick pea, sweet pea, green pepper, and tomato is my fav
sometimes i put veganaise on it

Yeah, I use a lot of fake deli meats, but they can REALLY add up.

The most delicious veg sandwich I ever had was Eggplant, mustard, and fake cheese on wheat. YUM.

Veggie bacon, lettuce, tomato, and avocado on toasted wheat bread. It is HEAVEN.

my campus is full of scary militant vegans, so there are tons of vegan options in all the cafes-- the best are the middle eastern sandwiches. i like cauliflower and potato curry, and of course, falafel. and they're only like, 3 dollars, which makes them the cheapest meal you can eat on campus.

avocado, sprouts/lettuce, tomato, red onion, tofurkey/fake deli meat with vegenaise and dijon mustard. if i'm at home then i put earth balance on one side of each piece of bread and toast it on the stove before assembling. so delicious and full of yum. and it's great because one onion and one tomato lasts me more than the week with this sandwich.

I make a really tasty wrap with homemade guacamole, sprouts, salsa, and black beans. It travels well because the guacamole almost makes a seal. I also like using flavoured wraps like sundried tomato and spinach. Pureeing the black beans might make it easier to eat, too.

I'll make the same thing with hummus, sprouts, and grilled veggies if I have any on hand. Even roasted red peppers from a jar will work. I like making basil vegenaise, too. Mmmmm.

Aaand of course, PB & J is fantastic.

No-Egg Salad Sandwich (out of Vegan Planet). Utterly delicious. 1 package extra firm tofu, pressed and drained. A couple pickled diced up, some diced onion, veganaise, salt and pepper.
Crumble up the tofu into small bits, add everything, mix, and let sit at least an hour. Toss onto some bread (toast it for a slice of heaven) with some lettuce and tomato if you're industrious, and enjoy. I love it.

Olive hummus, avocado, spinach, sprouts, carrots, mustard and a little vinegar. I also love bbq tofu on a bun with sprouts, pickles and lettuce.

oh man, my favorite sandwiches always have avocado and hummus. people don't think to combine them but it's heavenly!

wraps with boca burgers crumbles, sauted onions and mushrooms, lettuce, tomatoes and italian dressing.

i had it at a restaurant once and was blown away.

do you season the crumbles for this at all? sounds interested and im always looking for something to do w/ a single boca package (they come in 3s and usually my bf and i make recipes which call for 2 and then have to buy a new box to get rid of the 3rd package heh)

I grill tempeh in a skillet with some tomatoes and basil. Mustard lettuce and mashed avocado.
Easier than scrambled eggs and ridiculously good.

Sliced avocado, tomato, red onion, garlic, sprouts, romaine lettuce on orowheat's whole grain+flaxseed bread with vegenaise, salt and pepper, and occasionally a herb blend (of oregano, basil, etc)

I need a sandwich now. :)

Marinated artichoke hearts, red onion slices, tomato slices, white mushrooms, cucumber layered on a roll that has either dijon mustard spread on it or hummus.

guacamole or hummus with tomatoes, lettuce, and olives
tofu salad sandwich
faux chicken patty
just vegetables - spinach leaves, tomatoes, olives, carrots, and vegan creamy dressing
I love to mix up the peanut butter + jelly, such as peanut butter and raisin; almond butter, apple and banana; peanut butter and craisins

Do hot sandwiches count too?
Peanut butter and heated faux Canadian bacon
fried faux turkey with gravy over top
faux philly cheese 'steaks' - onions, mushrooms, tofurky slices and veganella sauteed together.

also avocado and red pepper on toast is delicious (and an excellent hangover cure)

I call it "awesome sammich" - avocado, alfalfa sprouts, dijon mustard, regular mustard, veganaise, spinach, tomato.

2 of my favourite are :
Eggless Egg Salad : Crumbled tofu with salt pepperm tumeric, veganaise, mustard, green onions & celery.

Chickpea Salad : Chichpeas mashed, salt, pepper, mustard, relish , green onions, green pepper & grated carrot. (This one will make a bunch and will survive in your fridge all week for SUPER easy sandwiches)

You could also find out what she's used to making for sandwiches as it might be as easy as subbing fake meat.

thank you for posting this!! ive been wanting someone to post about sandwiches. im still on the road to converting from a vegetarian and a good sandwich for lunch is hard to find. i usually stick w/ tofurkey and w/e veggies.

as for me... i also really love a BLT made w/ fakin' bacon (a tempeh bacon they sell at my local wild oats). soooo deeelish w/ lots of veganaise and mustard. i also recently have gotten in to cooking portabella caps whole w/ this yummuy roasted garlic olive oil and i bought a garlic mustard to go w/ it (i love garlic!). another hot sandwich ive been making w/ these pre-breaded eggplant cutlets w/ any yummy tomato sauce on a whole wheat bun. yumm :D

Grill up some eggplant, zuchinni and potatoes (been pulled off sucessfully with left over french fries), and put it on a baguettey thing with tomato sauce. I know it's some sort of authentic turkish food, but I can't remember what it's called.

Like all things with tomato sauce, it's best the day after you've made it.

I betcha you could make an entire batch of them and wrap them in tin foil and freeze them.

Quite simply: Avocado on sourdough bread! It's been my favourite since I was about 2 years old.

If that's not enough spread a layer of hummus onto the sourdough, it's so delicious.

Ok, now I'm hungry.

That's awesome that your friend is willing to try giving up meat. We all know it's easy, but I would say I never knew it was easy until I gave it a try. ;)

Tofu is awesome and inexpensive, and makes wonderful sandwiches in a number of ways. My favorite is grilling marinated tofu slices on a George Foreman grill (that I got for $12 at Target), and then topping it with tomato between bread. You can also grill veggies that way, and that makes a wonderful sandwich, too. :)

I've seen George Foreman grills for as low as $5 on craigslist, too, if that whole, "used" thing isn't too much of a gross out.

Bada bing! I've never grilled my tofu (I always fry it, because I must like being tubby), but now feel that I must!

In what do you marinate your tofu?
